West eats East.

[T]here are about 40,000 Chinese restaurants in the U.S., "more than the number of McDonald's, Burger Kings, and KFCs combined," Chinese food might be our national cuisine.

Astounding.

Apparently General Tso's Chicken is the exception that proves the rule(in reference to your West is Best post)

Oops, I had been posting as anonymous even though I recently set up a blog account. There is nothing on it, so I hadn't been using the ID for anything. I guess now that it is out there, I will have to post something.

Sometime in the first half of 1994, Smithsonian Magazine ran an interesting article on Chineese food in America. It seems that the Chineese building the railroads ate healthier than the Irish and blacks who worked on the railroads. So, the railroad companies hired the Chineese to cook for everyone. This is part of what introduced their food to the rest of us. It is kind of like the American soldiers who came back from Italy in WWII and started the pizza craze.

So that's where the stereotype of the Chinese cook in the old West came from! As seen on "Bonanza."

"Bonanza." Hoss? Little Joe? Errr...

I believe it was Sinatra who said it best: "I ordered some Moo Shoo pork, because after we schtup, we could have some chink food!"

He also said something about being able to eat off Bess Truman's ass, too, so maybe Ol Blue Eyes was a loon.
